    2 c lentils
    2 c sliced cucumbers
    1 c sliced fennel
    1/2 c chopped red pepper
    2 tbsp chopped basil
    1 tbsp olive oil
    1 tbsp white wine vinegar

Directions

In a large bowl, combine the lentils, cucumbers, fennel, red peppers and basil. Add the oil and vinegar and toss to combine
