Ingredients

    1 pkg of baby spinach
    1 lg Granny Smith apple, quartered, cored, and thinly sliced
    1 lg pear, quartered, cored, and thinly sliced
    4 oz slice turkey, cut into 2x1/2 strips
    1/4 cup thinly slice red onion
    2 tbsp pumpkin seeds
    2 tbsp golden raisins
    2 tbsp coarsely chopped walnuts, toasted.
    Dressing:
    1/2 cup buttermilk
    2 tbsp reduced calorie mayo
    1 tbsp cider vinegar
    1 1/2 tsp grainy Dijon mustard
    1/2 tsp coarse-ground black pepper
    Salt to taste.

Directions

To make dressing: In a salad bowl, whisk together the buttermilk, mayo, vinegar, mustard, pepper and salt.

Assembly salad: Add the spinach, apple, pear, turkey, onion. pumpkin seeds, raisins and walnuts to the salad bowl.
