Introduction

A very easy to make, full of fresh green colors, high protein salad. A very easy to make, full of fresh green colors, high protein salad.
Number of Servings: 2

Ingredients

    Tuna Canned, in water, 1 can=5-6oz
    Green Onions, 1/4 cup chopped (4-5 spears)
    Eggs, 2 large, hard boiled
    Capers, canned, 1 tbsp, drained and smashed
    Lemon juice, 1 tbsp
    Low Fat Mayo with olive oil, 2 tbsp
    Greek yogurt, 0% fat, 2 tbsp
    Ground Black pepper to taste

Directions

Makes 2 1-cup servings.
1. Boil the eggs. Cool them and chop.
2. Drain the tuna, put it into the bowl and break into bite-size pieces. Add ground black pepper and fresh lemon juice.
3. Chop green onion.
4. Cut the capers or smash with side of knife.
5. Put all the ingredients in a bowl, add the mayo and mix all together.
Chill the salad before serving.
