Introduction
Quick and easy soup that is great when your garden is overflowing and you don't know what to do with all of the vegetables. Try it with celery, zucchini, or whatever veggies you have on hand.So low in calories and fat that you can eat as much as you want! Low sodium! Ingredients

V8 Vegetable Juice, Low Sodium, 2.5 Cups
Summer Squash, 1 cup, sliced
Onions, raw, 1 cup, sliced
Shallots, 10 tbsp chopped
Broccoli, fresh, 2 cup, chopped
Red Potato, 120 grams
Carrots, raw, 1 cup, chopped
Hominy, 2 cups (one can)
*Goya Ham Seasoning - 1/2 package
*Minced Garlic, 2 tsp
4-6 Cups Water
Directions
Heat saute pan and add potato and carrots. Saute with water for five minutes. Add onions, shallots, broccoli, squash and saute an additional five minutes with water.
Add V8, hominy, Goya seasoning (add one packet at a time to taste), garlic, water. Bring to a simmer.
Simmer for 20 minutes. Adjust seasoning to your own preferences. Wait until the very end to adjust salt level.
I typically use lots of garlic, pepper, a little bit of seasoned salt or celery salt. If I'm in the mood for some spice, I add chili powder, Tabasco, chili oil, chili flakes or cayenne.
