Ingredients

2 ears of corn, cooked and trimmed
1 can (15 ounces) black beans, drained and rinsed
1 cucumber, diced
1 green bell pepper, diced
2 cups grape tomatoes, sliced in half
4 green onions, diced
2 tablespoons chopped flat-leaf parsley
1/2 teaspoon minced garlic
1/3 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon sugar
1/4 teaspoon curry powder
1/4 teaspoon dry mustard
salt and pepper to taste
Directions
Combine corn, beans, cucumber, green peppers, tomatos, green onions, parsley and garlic in a large bowl. In another bowl, whisk together the remaining ingredients. Toss with the vegetables. Refrigerate, covered, for four hours to let flavors meld.
