Introduction
This is a great, gluten free bread that can be done in the bread machine. This works best in a machine that you can control the rise and bake times. Ingredients

114g Brown rice flour
95g white rice flour
57g arrowroot powder
38g sorghum flour
38g potato starch
38g cornstarch
2 tsp xanthan gum
1 tsp salt
1 tbsp yeast
1 1/4 cup warm water
3 tbsp oil
1 egg
2 egg whites
1 tbsp sugar
Directions
Place warm water (I use straight hot tap water) in a container with the yeast and sugar. Set aside. Place egg, egg white and oil in the bowl of a stand mixer. Mix just until blended. In a seperate bowl mix all dry ingredients together with a whisk. Add dry ingredients to the wet. Add in the yeast mixture. Turn on stand mixer for about 30 seconds. Turn off mixer and scrape down sides of bowl. Turn mixer on high and let mix for 4 minutes. Meanwhile, lightly spray the bread pan with cooking oil. Place mixed bread batter (it will look like a thick cake mix) in the pan. Smooth the top.
Place in bread machine. Let rise for about and hour to 1 hr 15 minutes. Batter should rise to almost the top of the pan. Bake for 38-45 minutes. Bread should be browned on top.
Remove the loaf and let cool completely before slicing. (best if cooled at least 5 hrs or overnight)
