Introduction

A spicy spin on the classic tuna salad using salmon. A spicy spin on the classic tuna salad using salmon.
Number of Servings: 16

Ingredients

    1 can Salmon
    4 stalks celery, chopped finely
    1/2 onion ,chopped finely
    1/2 cup mayo
    1 tsp Tony Chachere's Cajun Seasoning (more or less to taste)
    4 boiled eggs, chopped finely
    1-2 tbsp yellow mustard (to taste)

    Sometimes I add horseradish for more kick (not included in the nutrition info)

Directions

Boil 4 eggs, Open and drain 1 4.75 ounce can of salmon. Chop eggs, onions, celery and add to the salmon. Add the mayo, mustard and seasoning.

I serve on toast, in sandwiches, on lettuce or spinach (my fave), or roll up in a low carb tortilla.

Serving Size: makes 16 servings of 1/4 cup each
