Ingredients

    4 Cups Swanson Chicken Broth 99% Fat Free
    .7 Medium Diced Onions
    4 Stalks Celery
    3 Medium Carrots peeled
    5 Chopped Garlic cloves
    3oz Tomato Paste
    4 Medium Blanched Red Ripe Tomatoes
    1 Cup Sliced Zucchini
    .5 Cup Sliced Winter Squash
    1 Cup Yellow Sweet Corn, Canned
    1 Cup Lima Beans, Canned
    .5 Cup Chopped Green Beans (snap)
    4 Tbsp Chopped Scallions
    2 Russet Potatos
    1 Tsp Salt
    1 Tsp Pepper
    .7 Tbsp Dried Basil

Directions

Makes 6, 1 Cup Servings

On medium heat, cook diced onion, chopped garlic cloves, chopped celery, and chopped carrots until onion start to go clear. Add broth, tomato paste, salt, pepper, basil, and rest of veggies. Cook over Medium-Low heat until veggies are fully cooked. Stir occasionally.

For an additional kick, serve with tortilla chips and fresh avocado on top.
