Introduction

Ingredients

    8 oz Andouille (or other smoked) sausage, chopped or sliced (depends on how chunky you want it)
    12 oz large shrimp, peeled and deveined (I use frozen cooked)
    2 C onion, chopped
    2 C celery, chopped
    2 C bell pepper, chopped
    4 C fresh okra, sliced (frozen works too)
    1 large zuchinni, diced
    4 cloves garlic, minced
    2 Tbsp butter (for sauteeing, optional)
    3 C fresh tomatoes, chopped OR 15 oz can crushed tomato
    fresh green chile or jalapeno, minced, to taste
    1 tsp file powder
    1 Tbsp Seafood Magic seasoning (by Chef Paul Prudhomme)
    1-2 tsp dried oregano
    red pepper flakes, salt & pepper to taste
    Optional : add chicken, corn, red beans, crab, crawdad, greens

Directions

Melt butter in soup pot, add onion, celery, green chile, garlic and sausage (can add raw chicken at this point if using)
Cook until onions are translucent and tender.
Add bell pepper and zuchinni, until just tender.
Add spices to taste.
Add broth, okra and tomatoes.
Simmer 10 - 15 min.
Add shrimp 5 min before serving ( you don't want them overcooked) - crab or crawdad meat can be add here too.
Serve on rice, quinoa or your grain of choice.
