Ingredients

    6 squash, yellow & green, diced (about 6 cups)
    1 large onion, diced (about 1 cup)
    2 carrots, diced (1 cup)
    2 tbsp olive oil
    1 cup 2% Mexican cheese blend, shredded
    1/2 cup reduced fat sour cream
    1/2 tsp black pepper
    1 tsp garlic
    1/4 cup bread crumbs (Pyrenees french bread)

Directions

Saute the onion, squash, and carrots in olive oil until they just begin to be tender. Drain. Add in sour cream, 2/3 cup cheese and seasonings, and mix together. Pour into a casserole dish. Sprinkle top with 1/3 cup bread crumbs and 1/3 cup cheese. Bake 350 for 25-30 minutes.
