Introduction

Ingredients

1 tsp. instant espresso powder*
1/4 cup boiling water*
1 cup vanilla soy milk
1 1/2 Tbsp. chocolate syrup
1/2 cup crushed ice
Directions
In a small bowl, dissolve espresso powder in water. Pour into an ice cube tray and freeze.
In a blender, combine soy milk, chocolate syrup, and espresso ice cubes. Cover and process until smooth. Add crushed ice; blend. Pour into glasses; serve immediately. Garnish with whipped topping and additional chocolate syrup. (Not figured into calorie calculation.)
*I dissolved 8 teaspoons of espresso powder in 2 cups of boiling water, filling an entire ice cube tray. I used two cubes for the recipe. Thus, I'll be ready the next time I have an urge for iced coffee.
