Ingredients

    3 cups summer squash, boiled
    1/2 small onion, chopped
    1 egg, beaten
    1 cup 2% cheddar cheese, shredded
    1 can 98% reduced fat mushroom soup
    1/2 stick light margarine
    1 cup reduced fat waverly or ritz crackers,crumbled

Directions

Mix all ingredients in bowl. Pour out into a greased, 8X11
Pyrex casserole dish. Bake at 350 for 30 min. or until browned on top.

Serving Size: makes 8 1/2 cup servings.
