    Red Potato, 2 Lbs un pealed and cut into 1-2 inch cubes
    Yogurt Nonfat Plain, 8 oz
    Kraft Velveeta reduced fat with 2% milk, 8 oz Cut into 1 inch cubes
    Grated Parmesan Cheese, 1/3 cup
    Organic Beef Broth, 1 cup, .5 cup
    Dijon Mustard , 2 Tbsp


Bring a large pot of lightly salted water to a boil. Add potatoes, and cook until tender but still firm, about 10 minutes. Drain, and return to pot. Combine Velveeta with warm potatoes to melt the cheese. Add remaining ingredients. Mash together until reaches desired consistency. Serving Size: 8
