Introduction

This is a salad I love in the summertime, I used what I had today but I usually throw in a yellow squash, and it's also great with asparagus or mushrooms This is a salad I love in the summertime, I used what I had today but I usually throw in a yellow squash, and it's also great with asparagus or mushrooms
Number of Servings: 4

Ingredients

    Eggplant
    Cucumbers
    Bell pepper
    onion
    olive oil
    vinegar
    pesto

Directions

put 1 T oil in skillet and saute veggies until soft, and/or browned
Mix red wine vinegar or cider vinegar with pesto, slowly at 1.5 T oil and mix. Toss in with vegetables. Can also add parmesan.

Serving Size: makes 4 1 cup servings
