Ingredients

5 tbsp butter, unsalted
6 oz precooked chopped/sliced turkey breast meat
1 roma tomato
8-10 fresh asparagus tips (about a cup)
1 1/2 bags precut lettuce
5 tbsp chopped cilantro
1 tbsp garlic
1/8 cup lime juice
11 oz frozen cooked shrimp
1 tsp Hunan pepper paste (or red pepper flakes or tobasco will do)
1 cup Mediterranean Cucumber Salad (see my other recipe)
-Please note: I could not find a way to add this to cucumber salad the ingredient list in its entirety. Just ad 74 calories to the recipe at the end of the recipe total and divide by six servings.
Directions
Place butter in skillet on medium heat until melted and bubbling gently. Add garlic, pepper paste, lime juice, and 3 tbsp cilantro. Stir. then add shrimp. AFter about 1 minute, add the asparagus and chopped turkey. Stir gently while cooking.
In a large bowl place the lettuce and the chopped roma tomato and the 1 cup of Mediterranean Cucumber Salad (include the liquid--as this will be the dressing).
When shrip are heated through, use a slotted spoon to lift the shrimp, asparagus, turkey mixture into the large salad bowl. Toss and serve immediately.
Makes 6 servings of about 2 cups each
