Introduction

I had this lovely salad at the Haret Jdoudna in Madaba, Jordan. This isn't their recipe, just an attempt to recreate something close with ingredients that can be found in the US.
This may change as I work to perfect it. Preportions are guess work at this point

Ingredients

    Salad
    1 head lettuce, shredded
    2 tomatoes, diced small
    1 bell peppers, diced small
    .25 red onion, finely chopped
    1 cup crumbled- semi-hard cheese, a seasoned feta works nicely
    .5 cup chickpeas

    Dressing
    3 oz greek yogurt
    1 clove garlic
    1 Tbsp Tahini

Directions

Prep and combine salad items
Mash garlic clove and mix into yogurt, blend in Tahini

Serving Size: 6
