Pumpkin Cookie Bars w/ Cream Cheese Icing Pumpkin Cookie Bars w/ Cream Cheese Icing

Ingredients

    Filling:

    2 c whole wheat, white enriched flour
    2 t baking powder
    1 t baking soda
    1 c splenda
    1/2 c splenda brown sugar
    1 1/4 t pumpkin pie spice
    1/3 c soft margarine
    1 c eggbeaters
    1 can pumpkin pie filling (15 oz)
    1/2 c carrot, finely grated

    ICING:

    4 oz low fat cream cheese, softened
    1/4 c splenda
    2 T non fat milk

Directions

Makes 48 squares

In large bowl: Beat Splenda, margarine, and Splenda brown sugar until crumbly. Fold in eggbeaters, pumpkin pie filling, and carrots. Mix until well blended.
In separate bowl: mix flour, baking soda, baking powder, and pumpkin pie spice. Add this mixture to previous ingredients. Mix well.

Preheat oven to 350 degrees F.

Make icing.
In small bowl: mix together cream cheese, milk, and sugar until well blended.

Spread filling mix onto greased jelly roll pan. Spread icing over filling.

Bake for 25 to 30 minutes or until toothpick inserted in center comes out clean.

Cool completely and cut into squares. Makes up to 48 servings.

    I found the icing to be rather thick and difficult to spread and recommend either adding more milk to the cream cheese to frost or swirling into the pumpkin mixture. - 12/24/07
