Introduction

The only potato salad I can eat and enjoy! The only potato salad I can eat and enjoy!

Ingredients

    1 lb new potatoes
    3/4 cup mayonnaise
    1/2 jar roasted red bell pepper, diced
    2 TBSP chopped green onion
    6 oz sweet relish
    1-2 TBSP spicy brown mustard
    pinch celery seed
    salt to taste

Directions

Wash potatoes well and boil until tender, but not soft. Drain, let cool, and cut into bite-sized pieces. In a seperate bowl, combine remaining ingredients and mix well. Add mixture to potatoes and toss until potatoes are completely coated.
