Ingredients

    Dry Ingredients:
    1c bran
    1 1/2c whole wheat pastry flour
    1tsp baking soda
    1 tsp baking powder
    1 tsp cinnamon
    1 tsp cardamom

    Wet ingredients:
    3/4c soy milk
    1tbsp egg replacer + 2 tbsp water
    1/8c molasses
    1/4 +1/8c honey
    2 oz unsweetened apple sauce
    2 tbsp ground flaxseed (optional)

Directions

Mix together dry ingredients + raisins and set aside
mix up the egg replacer and let it set while you mix up the soy milk and honey/molasses (you can also use all honey or all molasses, just has to add up to a half a cup). Mix in the egg replacer last. Pour the wet ingredients into the dry ingredients and mix just until it's moistened. Spoon into muffin pan, sprinkle tops with turbinado sugar if you want to, and bake in 400 degree oven for 15 minutes.

Makes One Dozen Muffins.

Eat a muffin and some fresh pineapple and it's like you never left the hotel.
