Ingredients

2 1/2 - 3 cups all-purpose flour
1 cup whole wheat flour
1 tsp sugar or honey
1 packet yeast (2 1/4 tsp)
2 tsp salt
2 tsp garlic powder
1 1/2 cup warm water
2 tbsp olive oil + 2 tsp to coat bowl
Directions
1. Dissolve the sugar/honey and yeast in the warm water. Let stand undisturbed for 3-5 minutes, then check to see that it has foamed up. If it did not, that means your yeast was bad or your water was too hot.
2. In a large bowl, stir together the whole wheat four, 2 1/2 cup all purpose flour, salt, and garlic powder.
3. Pour the yeast mixture and 2 tbsp olive oil into the bowl with the dry ingredients. Stir together until a dough forms.
4. Knead the dough for 6-9 minutes, until smooth and elastic. Add the remaining 1/2 cup all purpose flour if the dough is too sticky. If too dry, add warm water 1 tbsp at a time.
5. Coat a large, clean bowl with the 2 tsp olive oil. Place the ball of dough in the bowl and turn it over to coat in lightly in the oil. Cover the bowl loosely with a kitchen towel or a piece of plastic wrap. Place in a warm, undisturbed area to rise for about 1 hour or until doubled in size.
6. Punch the dough down and split into halves or quarters, depending on if you want to make 2 large pizzas or 4 individual pizzas. Cover and let rest for about 10 minutes.
7. Roll out the portions of dough and place onto a pizza pan or cookie sheet. Top with whatever you like. If you want a very crispy crust, add cornmeal to your pan before putting the dough on.
8. Bake 1 large pizza or 2 mini pizzas at a time in a 400° F preheated oven for 15-20 minutes.
