Introduction
I just threw this together one day when I got home really late and needed some dinner. I ate the entire pot as a meal, but it would probably be best in servings as a side dish. :P I just threw this together one day when I got home really late and needed some dinner. Ingredients

1 can diced tomatoes
1/2 cup dry couscous
3 tsp italian seasoning (or to taste)
4 basil leaves, chopped or torn
salt and pepper to taste
Parmesan for topping
*I added about a tsp of sugar to mine, because my tomatoes were really acidic. It's not included in nutrition.
Directions
In a sauce pan add canned tomatoes, 1/2 can water and dry seasonings*. Bring to boil.
Add couscous and basil and cook as per directions on box of couscous.
Sprinkle with parmesan.
Serving Size: Make three 1/2 to 2/3 cup servings
