Ingredients

    1 Large Yellow Onion diced
    2 Cups uncooked Farro (spelt)
    1 can chickpeas (garbanzo beans)
    6 cloves garlic finely minced
    1 tbsp finely chopped fresh parsley (may substitute with dry)
    1 tsp salt (or to taste)
    1 tsp white pepper (or to taste)
    4 Cups Vegetable broth (may use chicken broth as well)

Directions

Heat olive oil at medium heat in a heavy sauce pan. Add diced onion and garlic and sautee 2 or 3 minutes. Add farro and saute another 4 to 5 minutes stirring ocassionally. Add chickpeas and continue sauteeing for an additional 3 minutes. Add broth and spices and bring to a boil. Cover pan tightly, lower to heat to medium low and simmer for 45 to 50 minutes or until all water is absorbed and farro is soft. Turn heat off and let stand for 10 minutes. Fluff with fork and serve.

    Incredible!
    Delicious! Even my meat eating husband loved it! I did add in some Berbere spice, which gave it the right amount of kick. - 11/12/19
