Introduction

This is a great quick salad, full of protein and fiber. Also great for vegans! This is a great quick salad, full of protein and fiber. Also great for vegans!

Ingredients

    1 can pinto beans, drained and rinsed
    1 can red kidney beans, drained and rinsed
    1 can white beans, drained and rinsed
    1 cup frozen shelled edamame, thawed
    1/2 cup chopped onion (any variety)
    1 cup chopped red bell pepper
    1/2 cup italian salad dressing (any brand)

Directions

Drain and rinse all beans, add to a large bowl. Chop the red pepper and onion, add to the bean mixture. Pour over the dressing, mix well. This is good right away, but even more yummy as it marinates in the refrigerator. Good for a side dish or even a main course lunch salad. Awesome for picnics! This recipe is very versitile--use whatever beans you like best.
