Introduction

Ingredients

    2 lbs ground turkey, 93% lean
    20 black olives, diced
    1/2 red onion, medium, diced
    20 crackers, saltines unsalted tops
    3/4 C bell pepper, diced
    1 large egg
    2 T ketchup
    1 T mustard, yellow
    5 ounces cheddar cheese, finely shredded

Directions

Combine all but the cheese in a large mixing bowl. Divide into 2 separate bread loaf pans and bake at 350 for 45-50 minutes; remove - can drain water if desired - add cheese and melt with an additional 10 minutes. Remove and cool.

Serving Size: Makes 16 slices approx 3/4 inch thick, good topped with warm tomato sauce
