Ingredients

    1 tbsp olive oil
    1 onion
    2 cloves garlic, finely chopped
    1 red bell pepper, cut into 1/4-in, pieces
    1 10-oz frozen lima beans, thawed
    1 cup fresh corn kernels (from 1 ear)
    I used frozen yelllow corn kernels
    1 tbsp red-wine or sherry vinegar

Directions

1. heat the oil over medium heat . Add onion, garlic, bell pepper, 1/2 teas salt, and 1/4 teas. pepper, and cook, stirring occasionally, until tender, 6 to 8 min.
2 Add the lima beans and corn and cook, stirring occasionally, until heated through, About 3 min. Remove from heat and stir in the vinegar.

* Delicious hot, at room temperature or cold*
