Extra Light Olive Oil, 0.5 tbsp
Garlic, 1 clove
Red Onion, Fresh, 0.25 cup
Pepper, red or cayenne, 1 tsp
Asparagus, fresh, 30 spears
Sea Salt, 1 dash
Kasseri (Greek Melting Cheese), 3 oz
Directions
1) Heat olive oil in a large saucepan over low heat 1 min
2) Add chopped garlic and heat 1 min
3) Add chopped onion and heat 4 min
4) Add cayenne, stir well, then layer in the asparagus, stirring so that each spear is coated
5) Add sea salt and stir well
6) Increase to medium heat and cook 4 min, stirring frequently
7) Cover and cook 2 min
8) Uncover and cook about 2-3 min or until a fork easily goes into the vegetable
9) Serve with a side of Kasseri chopped into small cubes
Serving Size: Makes three servings of 10 spears and 1 oz of cheese per serving
