Ingredients

2 Slices of bacon
1 onion chopped
1 clove of garlic
2 Tbsp chopped bell pepper
2 diced potatoes
3/4 c diced celery
2 cups chicken stock
1 cup evaporated
1 1/2 ears of corn or 1 can of whole kernal corn
1 can of cream of corn
1 Tbsp of room temperature butter
2 teaspoons flour
Salt and Pepper to taste
Directions
Cut bacon into 1/4 inch diced and brown in bottom of a saucepan. Add onion,garlic and pepper; saute 5 minutes.
Add potatoes, celery and boiling stock. Add salt and pepper to taste. Cover and simmer over low heat until potatoes are tender. Add corn and evaporated milk. Blend together butter and flour , gradually add to chowder.
Cook, uncovered over low heat for 20 minutes, stirring occasionally until soup is thickened. Be careful not to scorch bottom.
Season to taste with salt and pepper.
