Ingredients

* Egg, fresh, 6 large
* Bacon, 5 medium slices, cooked
* Onions, raw, .5 cup, chopped
* Sweet peppers (bell), .5 cup, chopped
* Colby and Monterey Jack Cheese shredded, 0.33 cup
* Tillamook Pepper Jack Cheese, 3 oz
* Butter, salted, 1 tbsp
Directions
Chop finely the onion and peppers. Put in small skillet and heat on medium until they start o sweat juices and onions are slightly see-through. remove from heat and allow to cool for a few minutes. Meanwhile, chop pepperjack cheese into small cubes, about 1/4 inch and chop cooked bacon into small pieces. Put eggs in blender and mix until completely liquified and starts to look foamy on top.
Put bacon, vegetables, cheese in a bowl and toss together. Grease a muffin pan with the butter, then spoon the bacon mixture evenly into the cups. Pour the eggs over the top so that the cups all have equal portions. Bake at 350 for 25-30 minutes. It's done when you lightly press the tops and they spring back. Should be light brown on tops.
