Introduction

Ingredients

    1 (29-ounce) can pumpkin puree or fresh steamed pumpkin
    1 cup apple cider
    1 tablespoon pumpkin pie spice
    1 Granny Smith apple, peeled and diced

Tips

Try this on acorn squash, too!
Give away small canning jars of pumpkin butter as gifts. Due to the low acid in the pumpkin, it is not suitable for canning. Place a label on the jar with the date made. Note that it will keep in the refrigerator for one week or up to three months in the freezer.
Be sure to use pumpkin puree, not pumpkin pie mix, which contains spices and sugar.

Directions

Place all ingredients in a lidded saucepan. Cover and simmer over moderate heat for 10 minutes. Remove the lid and cook for an additional 20 minutes. Stir frequently, as the mixture gets quite thick.

Puree with an immersion blender or in a food processor. Pour into canning jars or sealed containers. Refrigerate until chilled.

Makes 3 cups, 2 tablespoons per serving.

    Is there a substitute for the apple cider? I live in the UK now and they don't have American style apple cider, they only have alcoholic cider. - 10/31/11

    This sounds really good, I love pumpkin pie! I will try it by micro-waving the apple for one minute WITH the peel, then process the apple first before cooking. I micro-wave apples all the time, tastes like pie without added sugar. I have not heard of an immersion blender, what is it? - 11/27/11

    FailteMyra - try using a really good quality apple juice instead of apple cider., and some light or white balsamic - or even some lime juice.
    I hadn't even been aware that there was this difference! Cider is cider - a slightly alcoholic apple (or pear) drink, and can be still or sparkling.

    I think I'd add a bit more pumpkin pie spice next time, but it's pretty awesome as is. My 5 year old gave it the thumbs up. I did use a second Granny Smith, but I also used a straight up 4 c of (fresh) pumpkin. I did have to cook longer to soften the apples enough to blend. They wouldn't cooperate. - 12/10/15
