Introduction

This is a delicious fruity chicken salad ! great for lunch or in a wrap ! This is a delicious fruity chicken salad ! great for lunch or in a wrap !

Ingredients

    2 chicken breasts ( boiled or grilled in honey mustard sauce )
    1 strip yellow pepper
    1 strip red pepper
    1 tbsp green pepper
    1 small carrot
    1 stalk celery
    1small onion
    1 small head of lettuce
    i diced apple
    2 tbsp raisins
    1 handful of walnuts,crushed
    1 tbsp light mayo
    1 tbsp honey
    1 tsp mustard

Directions

Boil the chicken breast in chicken stock and set to cool ( i cooled in freezer for 15 minutes ! ) ..
or u can marinate chicken in honey mustard then grilled it in a skillet , superb too !

cut all the vegetables into cubes
,then add the chicken,apple, raisins and walnut..sprinkle the curry .
if u used boiled chicken,then make a honey mustard using the light mayo, mustard and honey or u just add the mayo ..mix well
,and serve cold :)
