Introduction

Here's a recipe for muffins with no oil and no added sugar (other than what is in the dried currants). The muffins are dense. Ingredients

    1 cup dried currants or raisins
    1 medium apple, peeled and chopped (1 cup)
    3/4 c unsweetened almond milk
    8 packets Splenda (replaced 1/3 c sugar)
    1/2 cup unsweetened applesauce (replaced 1/4 cup vegetable oil)
    1 cup flour
    1 cup quick cooking oats
    2 t baking powder
    2 t cinnamon
    1 t nutmeg
    1/2 t salt
    1/8 t nutmeg and 1/8 t cloves (or 1/4 t allspice)
    2 T brown sugar.

    Combine currants, aplle, milk, sugar, and applesauce in medium mixing bowl. Stir together flour, oats, baking powder, and spices/salt. Stir into currant mixture just until combined. Spoon batter into prepared muffin cups. Sprinkle tops with 1/2 t brown sugar. Bake 20 minutes or until golden brown and toothpck inserted comes out clean.

    Note: these are fairly lumpy and don't really look like they raise, so be prepared for that--not a smooth pretty muffin top.

Directions

preheat oven at 400 degrees. Grease muffin cups or use paper baking cups. Bake 20 minutes or until toothpick comes out clean.
