Ingredients

    2 Sweet Potatoes (approx 5" long) skinned and cubed
    2 Medium Onions diced
    1 16 oz can of diced tomatoes
    2 Large Bell Peppers chopped
    8 oz Green Beans chopped
    1 cp Green Lentils
    1 Vegan Vegetable Bouillon Cube
    Chili and Curry powder to taste

Directions

Bring 3 cups water, bouillon cube, curry powder, chili powder (I usually start out with 1 TBS of each and go from there if I want more) and the 1 cp lentils to boil. Once boiling, bring down to simmer, cover and let simmer for 10 min.

While that is simmering chop/dice the potatoes, onions, peppers, and green beans.

After 10 min add the potatoes, onions, peppers, tomatoes (juice included) and beans to the pot. Add more water if needed. Bring to a boil again, then turn down heat and let simmer for about 15 min more or until the potatoes and lentils are cooked through.
