Introduction

Ingredients

    Onions, raw, 1 medium, diced
    Garlic, 2 clove, minced
    Olive Oil, 1 tbsp
    Whole Wheat Flour, 1 tbsp
    Tofu, soft, 1 block
    Soy Sauce, 4 tbsp
    Sour Cream, reduced fat, .5 cup
    Lemon Juice or White Wine Vinegar, 3 tbsps
    Spinach, frozen, 1 package (10 oz), defrosted & squeezed
    3 scallions, sliced thinly
    Mozzarella Cheese, part skim milk, 3 oz, grated
    Parmesan ground, 1 oz
    Cayenne, to taste
    Salt and Pepper to taste
    Tablespoon of mustard.

Directions

Sweat onion and garlic in oil until soft. Add flour and stir in. Incorporate soy sauce. Add tofu and crumble like crazy. Add a little water (1/2 cup) and sour cream and lemon juice or vinegar.. Blend until creamy. Add Spinach and scallions, cooking for a few more minutes on low, the blending them. Add a cayenne, salt, pepper, and possibly onion powder and or garlic powder to taste.

Serve with warm, whole wheat pita and crudite. 1 cup makes dinner!

Add cheeses before serving, incorporate.

Serving Size: make 8 1/2 cup servings. (!!!!!)
