    1/4 cup low-sodium soy sauce
2 fl oz mirin, or 1/4 cup
    1/4 cup unpacked brown sugar
4 pieces ginger root, 1 inch each, sliced
    4 medium scallion(s), chopped, divided
1 pound sea bass fillet(s), black bass, four 4 oz pieces
    2 cup cooked white rice

In a large, nonreactive soup pot, stir together soy sauce, wine, sugar, ginger and 3 scallions. Bring to a simmer.

Lower fish into liquid and simmer for 5 minutes. Reduce heat and let sit for 5 minutes over very low heat.

Distribute 1/2 cup rice onto each of four plates. Lift fish out of poaching liquid and set one fillet on top of rice. Spoon a little poaching liquid over each, sprinkle with remaining scallions and serve.
