Introduction

Ingredients

    • 1 lb stewing beef, cut into 1” cubes
    • 2 large onions, finely diced
    • 2 cloves garlic, minced
    • 4 tbsp curry powder
    • 1” cube ginger, minced
    • 1 5.5 oz tin tomato paste
    • 3 tbsp mango chutney
    • Juice of 1 lemon
    • 3 cups beef stock

Directions

Spray a non-stick pot with pam. Over medium high heat, brown meat in batches, removing after each batch. When all meat has been browned, return all meat to pot. Add onions and garlic and sauté with beef for about 2 minutes, or until soft. Add remaining ingredients. Heat to a simmer, cover and allow to simmer over medium low heat for about 2 hours, or until meat is tender.

Serve with basmati rice and a quartet of condiments including: nuts (cashews, almonds, peanuts, coconut), sliced fresh fruit ( bananas, oranges, mangoes, grapes, tomatoes), dried fruit (raisins, chopped apricots, currents, prunes, dates), and chutney.
