Number of Servings: 8

Ingredients

    5-ish Sweet potatoes
    Homemade Chicken Stock (or store-bought, enough to cover potatoes)
    2 Medium to large Leeks
    1/2 cup Coconut milk (to taste and thin)
    salt pepper and cumin to taste

Directions

Cut potatoes into cubes or slices, cook in stock in a large pot or dutch oven.
In a separate pan, slowly cook down sliced leeks until soft and sweet. Add to soup pot.
When potatoes start to fall apart, puree with hand blender or food processor. Add back to soup pot. Add 1/4 to 1/2 cup of unsweetened coconut milk, adjust to taste or desired thickness. Enjoy with a crusty whole grain loaf!

Serving Size: Makes 8 sides, or 4 dinner portions
