Number of Servings: 10

Ingredients

    3 pounds of brocoli
    turkey broth (3-5 quarts)
    2 cups unsweetened soy milk
    2 tsp salt

Tips

I've put spices in this like cumin or nutmeg, I've used butter or olive oil. My kids love oyster crackers in it but the bottom line is if I put a couple of bags of broccoli in a few quarts of broth (any kind--veggie to make this vegan), boil it, whirr it with the stick blender, add soy milk and stick it in a mug, we are all really happy!


Directions

Boil the brocoli in the broth until tender, use immersion blender to "cream" soup. Add salt. Add soy milk and serve.
