Introduction

Ingredients

    whole wheat flour
    dough conditioner (vital wheat gluten)
    oats
    acid medium (1T apple cider vinegar + 3 T water)
    honey
    olive oil
    millet
    flax seed
    yeast
    dough conditioner
    salt
    water

Tips

If you don't have time (or patience) to let the dough rise 3 times, skip #6. The bread will still be delicious! This is a little sweeter of a bread and is particularly tasty as toast with sweeter toppings.


Directions

1. Combine flour, acid medium, oats, honey, olive oil, millet, flax seed and 3/4c water in a medium bowl. Cover and let soak for 12-24 hours at room temperature. (This allows the grains to ferment, reducing the bitterness of the wheat).

2. After soaking the grains, combine 1/2T yeast, 1/4t honey and 2T warm water and let sit for 5 minutes. This will activate the yeast. If the mixture isn't foamy and frothy after 5 minutes, the yeast is dead and you should start over.

3. Combine yeast mix, soaked grains and remaining ingredients until the dough cleans the sides of the bowl.

4. Knead the dough for 10 minutes or until the conditioner is developed. Dough should be tacky but not sticky.

5. Move dough to a greased bowl and cover. Let dough sit in a warm place until it has doubled in size. (About 90 minutes).

6. Punch down the dough and turn it over in the bowl. Allow to rise until it has doubled again. (About 45 minutes).

7. Punch down again and shape into a rectangle. Roll the dough into a loaf and place into a greased bread pan.

8. Let rise again. (About 30-45 minutes).

9. Place in a 350 degree oven for 30-45 minutes.
