Introduction
Lentils are inexpensive, filling, and chock full of complex carbs and a decent amount of protein for a veggie. I keep some of this in my slow cooker at all times to use as a base for other dishes. You can adjust the spices to suit just about any preference, but I love spicy foods. I got the idea for this as an inexpensive, healthy food from a TV series called "the young ones" which is what I named it after. Ingredients

1 pound bag of lentils ($1 at most grocery stores!)
1 8 oz can chicken broth
2.5 cups salsa
10 oz package of your favorite frozen veggies
4 cloves garlic, chopped
1 cup chopped onions
Spices as preferred
I use
4 tsp curry powder
and 1 chopped hot pepper
Directions
Chop fresh veggies.
Combine them with spices and chicken broth in a large pot or slow cooker. Pour in lentils. Allow mixture to soak for 3-5 minutes, then add other ingredients and pour water over the top of the pot until everything is covered.
Lentils soak up liquid like crazy! They are best eaten when slow cooked or allowed to soak for a couple hours before cooking. When using a pot, I put this stuff together, then go to work, and heat it when I come home. It only really needs to cook for 25-30 minutes, though.
Serving Size: Makes around 11 bowls
