Introduction

My version of a stuffed cabbage soup My version of a stuffed cabbage soup
Number of Servings: 24

Ingredients

    1/2 head of cabbage - shredded
    2 - large cans fat free chicken broth
    1 - 32 oz can diced tomatoes
    1 - 15 oz can crushed tomatoes
    1 onion - diced
    2 stalks of celery - diced
    2 large carrots - chopped
    2 c farro (or brown rice)
    1 lb. extra lean ground beef
    salt & pepper to taste

Tips

I added some sausage seasoning to the ground beef for some additional flavor - you can also add crushed red pepper or other spices if you prefer a spicy soup.


Directions

1. Saute the ground beef with salt & pepper or any other desired seasonings in a stock pot
2. Saute the chopped onion, celery, and carrots
3. Add beef back to the stock pot
4. Add 1 can of broth, crushed tomatoes, diced tomatoes and shredded cabbage and bring to a simmer
5. Cook farro / rice in the second can of broth until done (about 40 mins)
6. Once farro is done, add back to the pot - turn off the heat and enjoy
