Ingredients

    *Couscous (dry), 1 and 1/2 cup
    4 Green Onion (Scallions)
    Yellow Peppers 10 strips
    1 carrot
    1 cup Red Cabbage, Chopped
    Seasoned Rice Vinegar, 4 tbsp
    Extra Virgin Olive Oil, 1 tbsp
    Curry powder, 2 tsp
    Water, tap, 2 cup

Tips

I like the taste of it better warmed up a bit, but it tastes good warm, hot, or cold. You can add golden raisins to it also but I don't like it that way so I omitted it!


Directions

In a large bowl, combine couscous and boiling water. Stir to mix, then cover and let stand until all the water has been absorbed, 5 to 10 minutes. Fluff with a fork.

Add green onions, bell pepper, carrot, cabbage, parsley.

In a small bowl mix lemon juice, vinegar, oil, curry powder. Add to salad and toss to mix. Serve at room temperature or chilled.


Serving Size: Makes about 8 1-cup servings
