Ingredients

2 cups Cottage cheese (1% milk fat)
1 cup shredded cheese (I use Colbyjack)
1/3 cup parmasean cheese
4 eggs beaten
10oz frozen chopped spinach (thawed and drained)
1 tsp oregano
1 chopped bell pepper (red adds nice contrast, but I usually use green because they're cheaper)
Directions
Mix all ingredients well and pour in ungreased 9" pie plate. Bake at 350 for 35-45 minutes (cooking time varies depending how well you drain the spinach).
Serving Size: Makes 4 large servings (300cals each) or 8 small servings (150cals each)
