Introduction

I always never had time for breakfast first thing in the morning. I make these ahead of time and take to work. Ingredients

    1 cup egg (4.86 lge or small eggs)
    1/2 cup green peppers diced
    1 sm onion disced
    1/4 med red tomato disced
    1/4 cup Borden Six Cheese Italian shredded
    3 Banquet Hot'n Spicy sausage links chopped( if you do not like spicy use the maple

Tips

To remove from cupcake tin use a small spoon and loosen along edge and scoop


Directions

Pre heat 350 degrees

Spray mini cupcake pan 24 cups or used mini cupcake papper.
Add all ingrdients into a bowl and mix,
scoop into cups and bake until set. 20-30 min

Serving Size: makes 24 mini muffins 2 per serving
