Ingredients

3 C Flour
2 t Orange Peel
1/2 t Salt
1 Egg, beaten
1/4 C Cooking Oil
1 C Cranberries, chopped
1 C Sugar
3 t Baking Powder
1/4 t Baking Soda
1-3/4 C 1 % Milk
3/4 C Walnuts, chopped
Tips
Wrapping and storing overnight before slicing will allow the flavors to blend more completely.
Directions
In a mixing bowl, stir together flour, sugar, orange peel, baking powder, salt, and baking soda.
In another bowl combine beaten egg, milk, and cooking oil. Add to flour mixture, stirring just till combined. Stir nuts and cranberries into batter.
Pour but-bread batter into a greased 9x5x3 loaf pan.
Bake at 3500F for 60-75 minutes or till toothpick comes out clean.
Cool in the pan for 10 minutes. Brush crust with butter to keep it from hardening. Remove from pans and cool thoroughly on wire racks.
Serving Size: Makes 1 loaf, 16 slices then cut in half, makes 32 pieces
