Introduction

Number of Servings: 6

Ingredients

    - 1 pound boneless beef chuck, cut into 1/2 inch cubes
    - 1 to 2 Tbsp. olive oil
    - 3 carrots, peeled and sliced/diced
    - 2 celery stalks, sliced/diced
    - 1 small onion, coarsely chopped
    - 2 garlic cloves, diced/pressed
    - 1 28oz can of petite diced tomatoes
    - 1/2 cup red wine
    - 5 beef bouillon cubes
    - 1 tsp black pepper
    - 2 tsp italian seasoning
    - 4 cups water
    - 1/2 cup orzo pasta

    Ingredient notes: Can substitute couscous for orzo, but it gives stew a different consistency

Directions

1.) Brown beef cubes in oil in skillet
2.) Place vegetables in bottom of slow cooker, and add the beef over top
3.) Next put the seasoning and bouillon cubes in, followed by all the wet ingredients
4.) Cover and cook on low for ~6 hours.
5.) Stir in orzo, cover, and cook for an additional 30 minutes or until the orzo is done.

Serving Size: makes roughly 6, 1.5 cup servings
