Introduction

Ingredients

    1 large sweet potato
    1 6 oz can chunk light tuna
    2 tbsp salsa
    1/2 cup part skim shredded mozzarella cheese

Directions

1. Wash sweet potato, poke holes into it with a fork, and wrap in a wet paper towel. Microwave approximately 8 minutes or until soft.
2. Drain tuna and mix with salsa.
3. Cut sweet potato in half. Top with tuna mixture and sprinkle cheese on top.
4. Broil approximately 5 minutes or until cheese is melted.

This recipe serves two.
