Ingredients

¾ cup margarine
½ cup granulated sugar
1/3 cup packed brown sugar
2 eggs
1 teaspoon peppermint extract
1 tablespoon vanilla
2 tablespoons peppermint or chocolate mint leaves - minced
1 ½ cups all-purpose flour
1 cup spelt flour
1 teaspoon baking powder
½ teaspoon salt
1 cup semi-sweet chocolate chips
Directions
Preheat your oven to 300 degrees.
Add the margarine and sugars to a large bowl and cream until fluffy.
Add the eggs and mix well.
Stir in the extracts, followed by the mint leaves, and blend.
Sift together the flours, baking powder and salt.
Stir into the large bowl of ingredients.
Fold in chocolate chips.
Drop onto un-greased cookie sheets.
Place the sheets in the oven and bake for 15 minutes.
Cool on sheets 5 minutes, remove to wire rack.
