Introduction

This is one of my favourite salad creations. It contains lots of veggies, some dairy, lean protein and healthy oils. If you want all 4 food groups in one salad, just add some brad buds or croutons to top it off! This is one of my favourite salad creations. Ingredients

    2 cups of Romaine lettuce (or lettuce of your choice)
    1 1/2 oz soft goat cheese (crumbled)
    1/2 cup diced yellow bell pepper
    1/2 cup diced fresh tomatoes
    1-2 tbsp of minced red onion
    1/2 cup canned black beans


    Dressing:
    1 tbsp balsamic vinegar
    1 tsp olive oil (or extra virgin olive oil)
    1 tsp of greek seasoning (or your favourite...taco..lemon pepper...etc)

    pour the dressing on the salad, mix, and enjoy!
