Ingredients

    3/4 cup all purpose flour
    3/4 cup wheat flour
    3 tablespoons splenda
    1/2 cocoa powder
    1 tsp baking powder
    1/2 tsp salt
    1/2 tsp baking soda
    3/4 cup egg substitute
    1/4 cup light margarine, melted
    1 tsp vanilla extract
    2 cups skim milk with 2 tbsp vinegar
    (can use buttermilk but adjust calories)
    1/2 cup mini chocolate chips

Directions

Preheat waffle iron accoding to manufacturer's directions.
In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, salt and baking soda.
In another bowl, beat together the eggs, melted margarine and vanilla, and then add the milk.
Add the wet ingrediets to the dry and stir in the chocolate chips just until combined.
Let rest 5 minutes.
Label the recommeded amout of waffle batter onto the center of the iron.
Close the iron top and cook until the waffle is crisp on both sides and is easily removed from the iron.
Serve immediately or keep warm in a 200 degree oven until ready to serve.
makes 16 4 inch waffles (I have a square waffle maker.)

    O.K.
    The batter was extremely thin & didn't rise much when cooking. I had to add more flour. By the time they cooked through, the edges were burning. Also this does not make 16 waffles, it made about 14 4" waffles. The taste was decent, but probably won't make again. - 2/6/11
