Ingredients

    1 egg, lightly beaten
    2 tablespoons 2% milk
    1/3 cup grated Parmesan Cheese
    1/3 cup dry bread crumbs
    1 teaspoon dried oregano, crushed
    1/8 teaspoon black pepper
    2 pounds meaty chicken pieces, skinned
    Nonstick cooking spray

Tips

I used Progresso Panko bread crumbs.


Directions

1. Preheat oven to 375*. Grease a large shallow baking pan; set aside. In a small bowl combine egg and milk. In a shallow dish combine Parmesan cheese, bread crumbs, dried oregano, and pepper.

2. Dip chicken pieces into egg mixture; coat with crumb mixture. Arrange chicken pieces in prepared pan, making sure pieces do not touch.

3. Bake for 45-55 minutes or until chicken is tender and no longer pink (170* for breasts, 180* for thighs and drumsticks). Do not turn chicken during baking.

Serving Size: makes 6 servings (about 5.33 ounces chicken per serving)
